Breakfast Sandwich


This is a super easy breakfast that's a lot more enjoyable than a bowl of cereal.  In fact, you'll probably enjoy this breakfast sandwich. I know I do! You can always get one of these at a fast food restaurant, but the egg is often precooked, frozen and thawed which usual means there were chemicals added to preserve it and is never as tasty as being made fresh.

Add some yogurt and fruit to "healthy" it up a bit!

Breakfast Sandwich Recipe

Prep time: 5 minutes (mostly waiting for the skillet to warm up)
Cook time: About 5 minutes
Number of Servings: 1 per sandwich

Ingredients
  • 1 English muffin (optionally: 2 slices of any type of bread or a bagel)
  • 1 egg (per sandwich)
  • 1 Slice of deli ham (optionally pre-cooked bacon instead)
  • 1 Slice of your choice of cheese
  • Butter (about a teaspoon worth)
  • Fresh fruit
  • Yogurt
How to cook
  1. Place skillet on stove and set to medium.
  2. Place English muffin (or other bread you chose) in toaster to your desired doneness).
    • Tip: Leave in toaster after done until you are ready to build the sandwich. This will keep it warm and from getting soggy as can happen if you put in on a plate while hot.
  3. After skillet is warm (about 4 minutes - test by dripping water on the pan... if the water beads and bounces around it's ready) add butter to pan and spread around
  4. Crack egg and add to pan.
    • If you don't like your yolk runny, break the yolk immediately. I like to just poke it with the broken shell that is already in my hand.
  5. Once whites are no longer liquid and yolk looks firm flip it.
  6. Place ham (or bacon) on skillet next to egg and give it a flip in about 30 seconds.
  7. Once egg is fully cooked (should be a little brown on both sides and yolk solid) remove from skillet and place on one half of English muffin.  
    • Option: You could do the egg "sunny side up" or scrambled if you prefer. However, I find those to be messy, and scrambled takes an extra dish plus time to scramble.
  8. Add slice of cheese
  9. Top with ham 
    • Tip: Placing the cheese between the egg and ham will help it melt
  10. Add some fruit and a yogurt to the plate and serve
